BLUEBERRY & RICOTTA PANCAKES
Here’s a simple recipe for you, that even Joe Exotic or Carole Baskin would eat together. Well, maybe. Probably not.
BATTER
2 eggs
1 banana
1 cup quick oats
1 banana
1 cup quick oats
2 tbs of Ricotta
2 tbs of any flour (only if the batter is too runny)
1/4 cup of Blueberries
2 tbs of any flour (only if the batter is too runny)

OPTIONAL
Coconut Flakes
Greek Yogurt
Maple Syrup
Greek Yogurt
Maple Syrup
METHOD
1. Blend eggs, banana, oats & ricotta – (if you don’t have a blender, use a bowl and fork to mash up ingredients).
2. On a medium heat fry pan, grease, and let sit for a moment.
3. Pour batter in and place blueberries on top.
4. Let sit for 2 minutes, or until you can feel a firm edge with your spatula
5. Flip pancake, let it sit for 2 mins.

6. Remove from the pan and put on your plate.
7. Add your toppings (add extra or other toppings of your choice if you’d like!).
8. Eat it. Enjoy it. Yum.
